4 potatoes
1 cup flour
1 egg
1 cup breadcrumbs
1 tsp salt
½ tsp pepper
2 cups oil
Method
- Peel and cut the potatoes into thick rings.
- Boil the potato rings in salted water until just tender, drain and leave to cool.
- Coat each ring in flour, dip it in beaten egg, then coat it in breadcrumbs.
- Heat oil in a deep-fat fryer or large pan to 175°C.
- Fry the potato rings in batches until golden brown and crispy.
- Remove from the oil and leave to drain on kitchen paper. Season with salt and pepper.
