Air fryer loaded sweet potato with pepper and cucumber salsa
A wonderfully healthy snack: loaded sweet potato from the air fryer. Crisp on the outside, soft on the inside and topped with a fresh pepper and cucumber salsa.

Zoete aardappel
300 g sweet potatoes
2 tbsp mild olive oil
Paprika-komkommersalsa
1 organic lime
½ shallot
1 red pointed pepper
½ cucumber
½ green jalapeño
Yoghurtdip
8 g fresh coriander
8 g fresh flat-leaf parsley
160 g 0% Greek-style yoghurt
Method
- Scrub the sweet potatoes clean, halve them lengthways and prick the skin with a fork. Rub all over with the oil.
- Bake cut-side down for 25 min. in the air fryer at 180 °C. Turn halfway through.
- Scrub the lime clean, grate the green zest from the fruit and juice half of it. Finely chop the shallot.
- Prepare the pepper and cut it into 3 mm (brunoise) dice. Dice the cucumber and jalapeño pepper in the same way.
- Mix the shallot, pepper, cucumber and jalapeño pepper with the lime zest and juice. Refrigerate until needed.
- Roughly chop the coriander and parsley, add them to the rest of the oil in the mini chopper and finely chop using short pulses.
- Stir in the yoghurt and season with pepper and, if necessary, salt.
- Mash the sweet potato in its skin with a fork, then top with ⅓ of the cucumber and pepper salsa and yoghurt dip. Serve the rest alongside.
