240 g Dutch steaks
2 tbsp crispy chilli oil
2 handfuls fried onions
2 pinches Salty Lemon herb blends
2 tsp black sesame seeds
1 spring onion
coriander (optional) · to taste
5 tbsp Kewpie mayonnaise
1 tbsp soy sauce
½ tbsp mirin
½ lime
Method
- Cut the spring onion into diagonal rings.
- Cut a piece of baking paper to the size of the tortilla press. Using a sharp chef’s knife, cut the steak into thin slices. Arrange them in a circle, close together, on the baking paper. Place another sheet of baking paper on top. Flatten in the tortilla press, or flatten with a heavy pan.
- Season the carpaccio with our delicious Salty Lemon Herb Mix. Mix the mayonnaise, soy sauce, mirin and lime juice in a bowl. Stir with a small spatula. It may take a little while for everything to combine properly.
- Finish the carpaccio with the homemade sauce, spring onion, black sesame seeds, fried onions, crispy chilli oil and, if you like, some coriander.
