Creamy Garlic Cheesy Chicken & Potato Traybake
A new way to prepare your high-protein meals for the week. This traybake recipe is incredibly indulgent and packed with flavour, with minimal washing up and very little effort.

Chicken marinade
800 g raw chicken breasts
800 g raw boneless chicken thighs
3 tsp salt
5 tsp Italian seasoning
4 tsp garlic powder
4 tsp onion powder
4-5 tsp paprika
6 tsp olive oil
Potatoes
1.6 kg raw potatoes
3 tsp Italian seasoning
3 tsp garlic powder
2 tsp chilli flakes
3 tsp paprika
3 tsp cooking spray or olive oil
1 red onion
Creamy sauce
425 ml regular or evaporated milk
250 g light garlic and herb cream cheese
120 g grated mozzarella or another cheese
Garnish
fresh parsley to taste
grated Parmesan optional · to taste
Method
- Cut the chicken breast and thighs into cubes. Season well and set aside.
- Add the diced potatoes and chopped red onion to a large lined baking tray. Season well with the listed herbs and cooking spray, then bake in a preheated oven at 200C/400F for 20-22 minutes. They don't need to be fully cooked.
- Once cooked, spread the marinated chicken over the potatoes in a single layer, spray with cooking spray and return to the oven for 25 minutes, until perfectly cooked and juicy.
- Remove from the oven and add evaporated or regular milk, light cream cheese and a generous handful of mozzarella.
- The residual heat from the tray will help the creamy sauce melt and thicken. Mix everything until fully combined, creamy and the cheese has melted.
- Garnish, then divide into 8 or more portions depending on your calorie needs and ENJOY!
