Chia pudding with baked apple

Chia pudding
30 g chia seeds
100 ml unsweetened almond milk
100 ml coconut milk, 17% fat
50 g unsweetened applesauce
1 tbsp Sweet Syrup, maple or erythritol
½ tsp vanilla extract
Baked apple
1 small Elstar apple
1 tbsp butter
½ tsp cinnamon
Assembly
200 g Greek yoghurt, 10% fat
30 g apple and cinnamon granola
Method
- Mix the chia seeds with the almond milk, coconut milk, apple sauce, sweet syrup and vanilla extract in a bowl. Stir well and place the mixture in the fridge for at least 2 hours, but preferably overnight, to set.
- Cut the Elstar apple into small cubes. Heat the butter in a frying pan and fry the apple cubes until soft. Stir in the cinnamon at the end, transfer the apples to a separate container and leave to cool in the fridge.
- The next day, get two glasses ready and take the ingredients out of the fridge. Divide the chia pudding between the glasses, followed by a layer of Greek yoghurt. Repeat the layers and finish with a layer of yoghurt. Garnish with the baked apple pieces and some granola.
