350 g flour
150 g wholemeal spelt flour
370 g water
4 g instant yeast
10 g salt
mixed seed as needed · to taste
Method
- Mix all the dough ingredients until there are no dry patches left. Cover and leave to rest for 15 minutes.
- Stretch and fold the dough once, then cover it and leave to rest in the fridge overnight or for up to 48 hours.
- Preheat a baking tray or pizza stone/steel to 250°C.
- Use a dough scraper to remove the dough from the bowl. Place it on a well-floured surface and cut it into 8 pieces. If desired, roll the dough in mixed seeds.
- Place the rolls on the preheated baking tray, sprinkle with water and preferably bake with steam for 12 minutes. Reduce the temperature to 230°C, remove the steam and bake until they have the desired colour.
- Leave the rolls to cool for at least 30 minutes, then enjoy!
