Sauce
200 ml coconut milk
4 tbsp yellow curry paste
1 tbsp soy sauce
1 tsp sesame oil
1 tbsp maple syrup
1 ground ginger inch cube
2 cloves garlic
3 cups vegetable stock
Noodles and vegetables
280 g noodles
350 g extra-firm tofu
1 carrot sliced
2 cups chopped broccoli
Toppings
spring onion for garnish · to taste
sesame seed for garnish · to taste
½ lime juice lime
red chilli for garnish · to taste
Method
- Preheat the oven to 200°C so it is ready for baking when everything has been combined.
- In your baking dish, mix the coconut milk, yellow curry paste, soy sauce, sesame oil, maple syrup, ginger, garlic and vegetable stock until well combined into a smooth noodle sauce.
- Add the noodles, carrot and broccoli. Use a spoon to gently toss everything together, making sure the noodles are submerged in the liquid. Place the tofu on top so it can brown in the oven.
- Place the baking dish in the preheated oven and bake for 40 minutes or until the noodles are cooked. Give everything a toss halfway through to make sure the noodles remain submerged.
- Remove the dish from the oven, mix with tongs to combine all the flavours, serve and add your toppings: spring onions, sesame seeds, lime juice and red chilli.
