Stuffed peppers with tuna

2 red and yellow peppers
1 tbsp olive oil
2 tuna in olive oil tins
½ red onion
50 crème fraîche or Greek yoghurt (10% fat) gr
1 tbsp mustard
salt pinch · to taste
1 tbsp capers
100 fresh baby spinach gr
50 grated cheddar gr
fresh parsley or spring onion to taste
salt and pepper to taste

Method
- Preheat the fan oven to 180 degrees. Halve the peppers and remove the seeds and membranes. Place the peppers in an oven dish, drizzle with olive oil and season with salt and pepper. Bake the peppers in the preheated oven for 15 minutes.
- Meanwhile, finely chop the red onion. Then drain the tuna. Put the tuna in a bowl with the Greek yoghurt and mustard, if using, and mix well. Add 1 tablespoon of capers, the chopped onion, pepper and salt, and stir well again.
- Grate the cheddar into a bowl or use ready-grated cheddar. Remove the oven dish with the peppers from the oven and fill each pepper with a handful of fresh spinach. Divide the tuna mixture between the peppers and sprinkle with the cheddar.
- Return the peppers to the oven and bake for another 5 to 10 minutes, until the cheddar has melted. Take two plates and place a handful of fresh spinach on each. Remove the oven dish from the oven and divide the peppers between the two plates. Garnish with fresh parsley or spring onion and lemon juice.
