Stuffed sweet potatoes

Sweet potatoes
4 sweet potatoes medium-sized
1½ tbsp olive oil
salt to taste
Minced beef filling
455 g minced beef
1 onion small
2 cloves garlic
1 tbsp olive oil
salt & black pepper to taste
1 tsp smoked paprika
2 cups baby spinach
Finishing touches
2-3 tbsp butter
1 cup grated cheese
To serve

Method
- Wash the sweet potatoes (do not peel). Rub with olive oil and sprinkle with salt. Bake at 200°C for 45-55 minutes, until very soft inside.
- While the potatoes are baking, heat a pan over a medium heat. Add olive oil and onion and fry for 3-4 minutes until soft. Add garlic and fry for 30 seconds. Add minced beef and season with salt, pepper and paprika. Fry for 6-8 minutes until browned. Stir in the baby spinach and fry for 1 minute, until just wilted. Set aside.
- Remove the potatoes from the oven. Cut them in half lengthways. Add the butter directly to the hot potato and mash the inside with a fork until creamy.
- Fill each potato with the minced beef filling and sprinkle with cheese. Return to the oven at 200°C for 8-10 minutes, until the cheese has melted.
- Add a spoonful of sour cream and sprinkle with spring onions. Serve with guacamole and salsa on top or on the side (or keep it simple with tomato, avocado and sweetcorn).
