Meat mixture
1 brown onion
1.5 kg extra-lean beef mince
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 tsp sage
1 tsp thyme
2 tsp smoked paprika
4 garlic cloves
100 ml Worcestershire sauce
350 g tomato purée/marinara sauce
Scrambled eggs
14 eggs
1 tsp salt
200 g egg whites
25 g light butter
Burritos
10 warm tortillas
25 g Sriracha mayonnaise
chive to taste
20 g low-fat grated cheese
Method
- Dice the brown onion and garlic cloves.
- In a large pan, cook the extra-lean minced beef with the diced onion and garlic until browned.
- Add salt, onion powder, garlic powder, sage, thyme and smoked paprika to the meat mixture.
- Stir in the Worcestershire sauce and tomato purée/marinara, and cook until everything is well combined.
- In a separate pan, whisk the eggs with salt and egg whites, using light butter.
- Warm the tortillas and fill each one with the meat mixture, scrambled eggs and low-fat grated cheese.
- Optionally add sriracha mayonnaise and chives before rolling up the burritos.
- Wrap each burrito in foil for storage or immediate consumption.
- To reheat, remove the foil and microwave for 2 minutes, then cook in the air fryer or oven at 190C/375F for 5-8 minutes.
