Potatoes
900 g Carisma potatoes
1 tsp olive oil
1 tsp garlic powder
1 tsp salt
1 tsp onion powder
1½ tsp smoked paprika
Chicken mixture
900 g boneless, skinless chicken breasts
½ onion
50 ml ranch dressing
100 g light grated cheese
Topping
50 ml barbecue sauce
50 ml ranch dressing
80 g sliced and cooked short-cut bacon
finely chopped parsley to taste
Ranch dressing
120 g low-fat Greek yoghurt
50 ml light mayonnaise or light sour cream
¼ cup fat-free buttermilk
1 tbsp ranch seasoning mixes
1 tsp fresh dill
½ tbsp lemon juice
Method
- Preheat the oven to 200°C.
- Mix the sliced Carisma potatoes with olive oil, garlic powder, salt, onion powder and smoked paprika. Spread them on a baking tray and bake for 20-25 minutes until crispy.
- Season the sliced chicken breast with the same herbs and spices as the potatoes. Cook in a frying pan over a medium heat until completely cooked through.
- In a large bowl, mix the cooked chicken, sliced onion, ranch dressing and light grated cheese.
- Serve the chicken mixture over the crispy potatoes. Top with BBQ sauce, extra ranch dressing, sliced bacon and finely chopped parsley.
- For the low-calorie ranch dressing, mix low-fat Greek yoghurt, light mayonnaise or sour cream, fat-free buttermilk, ranch seasoning mix, fresh dill and lemon juice.
