500 g beef
300 g onions
3 cloves garlic
1 red pepper
2 bay leaves
salt to taste
pepper to taste
2 tbsp peanut oil
1¼ cups beef stock
1 tsp ground coriander
1 tbsp curry powder
1 tsp ground ginger
1 pinch ground cloves
1½ tbsp dark brown sugar
1 tbsp white vinegar
3 tbsp sweet soy sauce
1 red pepper
1 tbsp cornflour
Method
- Heat the oil in the pan and brown the meat all over over a high heat.
- Add the onions, garlic, red chilli and bay leaf, and fry for a few minutes until the onions have taken on some colour.
- Season the meat with pepper, salt, ground coriander, curry powder, cloves and ground ginger. Mix everything together well.
- Deglaze the meat with the beef stock.
- Add ketjap manis, vinegar and dark brown sugar to bring the stew to taste.
- Let the meat simmer gently in the stew pan for 2,5 to 3 hours until tender.
- If the stew is still too thin, you can thicken the sauce by mixing cornflour with water. Add this a little at a time until it reaches the desired thickness.
