2 cups plain flour
½ cup sugar
1 tbsp baking powder
1 tbsp cinnamon
½ tsp salt
1 cup milk
1 egg
¼ cup butter
1 cup chopped apples
Method
- Preheat your oven to 190°C and line a muffin tin with paper cases.
- In a large bowl, mix the flour, sugar, baking powder, cinnamon and salt.
- In another bowl, whisk together the milk, egg and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped apples.
- Divide the batter evenly between the muffin cases.
- Bake for 20-25 minutes, or until a skewer inserted into the centre comes out clean.
- Leave the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
