Dough
160 g Greek yoghurt
120 g spelt flour
1½ tsp baking powder
Filling
20 g Sukrin Gold
4 tbsp cinnamon
15 g protein powder
4 tbsp water
Before baking
¾ tbsp semi-skimmed milk
Icing
2-3 tbsp quark
10 g protein powder
Method
- Mix all the ingredients for the dough and knead until it forms a ball. Dust your work surface with flour and roll out the dough.
- Mix the egg white powder for the filling with a little water (about 4 el, it shouldn’t become too watery) and spread this over the dough.
- Mix the Sukrin with the cinnamon and spread this over the dough too.
- Roll up the dough and cut it into pieces. (Tip: using thread or dental floss gives you neater rolls.)
- Place the rolls in an oven dish with a shallow layer of milk. This helps keep the cinnamon rolls lovely and chewy.
- Bake the rolls in the oven or air fryer at 185 °C for 6–8 minutes, until golden brown.
- Mix the ingredients for the icing and spread it over the warm cinnamon rolls.
