Mayonnaise
2 egg yolks
2 lemons
1 tbsp mustard
1 tsp Worcestershire sauce
1 white pepper pinch
1 salt pinch
200 ml peanut oil
Cocktail sauce
200 ml mayonnaise
2 tbsp tomato ketchup
1 tbsp ginger syrup
1 tbsp cognac
1 tbsp sherry
1 cayenne pepper pinch
lemon juice drops · to taste
100 ml double cream
Prawns and lettuce
200 g Dutch shrimp
1 little gem lettuce head
Garnish
1 paprika powder pinch
4 fresh chervil or parsley sprigs
Method
- Add the egg yolks, lemon juice, mustard, Worcestershire sauce, pepper and salt to a bowl. Whisk with a hand whisk and gradually add the oil drop by drop while whisking, until the mayonnaise has emulsified.
- Stir the ketchup, ginger syrup, cognac, sherry, cayenne pepper and lemon juice into the homemade mayonnaise.
- Whip the double cream until it reaches the consistency of yoghurt, then fold it into the cocktail sauce.
- Rinse the prawns under cold running water and pat dry with kitchen paper.
- Shred the lettuce. Spoon a layer of cocktail sauce into the glasses. Divide the prawns between them. Spoon another layer of cocktail sauce over the prawns.
- Garnish with paprika, chervil (or parsley) and a lemon wedge.
