Meatballs
500 g minced chicken
1 small courgette
1 carrot
2 spring onions
2 tsp chopped garlic
1 tsp ginger paste
1 tsp chilli sauces
1 tbsp soy sauce
1 egg
½ lime juice
Sauce
1 red pepper
1 tsp chopped garlic
1 tsp ginger paste
2 tbsp soy sauce
400 ml coconut milk
2 tbsp red Thai curry paste
2 spring onions
1 handful chopped coriander
½ lime juice
½ chicken stock cube
1 tbsp honey
Method
- Add all the meatball ingredients to a bowl and mix well.
- Divide the mixture into 12 and shape into meatballs.
- Cook them in a pan over a medium heat for 10 minutes.
- Remove from the pan and set aside.
- Add the peppers to the same pan and cook for 5 minutes.
- Add the remaining sauce ingredients, mix well and simmer over a medium heat for 10 minutes.
- Return the meatballs to the pan, reduce the heat and simmer for another 10 minutes until the sauce starts to thicken.
- Serve with rice and vegetables for a deliciously warming winter meal.
