Low-carb tiramisu truffles

1 espresso
160 g almond flour
60 g erythritol powder
salt pinch · to taste
250 g mascarpone
50 ml double cream
60 g dark chocolate chips
1 tsp vanilla extract
30 g cocoa powder
Method
- Make an espresso or mix the hot water with the instant coffee. Set aside.
- Briefly toast the ground almonds in a dry frying pan, stirring continuously. Leave the ground almonds to cool.
- In a small bowl, mix the ground almonds with the powdered erythritol and salt. Add the mascarpone and coffee, and mix everything well with a spatula.
- Place the bowl in the freezer for 30 minutes to allow the mixture to firm up.
- Melt the chocolate au bain-marie with the double cream and vanilla extract. Stir until smooth, then remove from the heat.
- Use a small ice cream scoop to portion out the dough. Flatten each ball, spoon a small amount of melted chocolate into the centre, then fold the dough closed again.
- Roll the truffles in the cocoa powder and place them on a baking tray. Repeat until you have about 20 truffles.
- Store the truffles in the freezer and take them out shortly before serving.
