4 tortillas
500 g minced beef
200 g grated cheddar
1 onion finely minced
2 cloves garlic finely minced
2 tbsp tomato purée
1 tsp chilli powder
1 tsp ground cumin
salt to taste
pepper to taste
1 tbsp olive oil
fresh coriander optional, for garnish · to taste
Method
- Heat the olive oil in a large frying pan over a medium heat. Add the onion and garlic and fry until softened.
- Add the minced beef to the pan and fry until browned. Drain off any excess fat if necessary.
- Add the tomato purée, chilli powder, cumin, salt and pepper. Mix well and simmer for 5 minutes.
- Divide the beef mixture evenly between the tortillas. Sprinkle with grated Cheddar cheese.
- Roll the tortillas up tightly and place them in an ovenproof dish. Sprinkle with extra cheese if desired.
- Preheat the oven to 180°C and bake the burritos for 10 minutes, or until the cheese has melted.
- Garnish with fresh coriander and serve hot.
