Pasta with creamy courgette sauce, crispy Serrano ham & burrata

150 g pasta of your choice
4 slices serrano ham
1 small courgette
70 g white onions
50 g light cottage cheese
100 ml light cooking cream
1 tbsp olive oil
3 cloves garlic
1 burrata ball
1 cup pasta water
10 g roasted pine nuts
1 rocket handful
pepper to taste
salt to taste
Method
- Cook the pasta according to the instructions on the packet. Reserve a cupful of the pasta water.
- Preheat the oven to 200 degrees. Place the Serrano ham on a baking tray lined with baking paper and bake for about 10 minutes until crispy.
- Cut the courgette into wedges. Finely chop the onion and crush the garlic.
- Heat 1 tablespoon of olive oil in a frying pan. First sauté the onion and garlic, then add the courgette. Cook until everything is soft and season with pepper and salt.
- Blend or purée the courgette together with the cottage cheese, cooking cream, pepper and salt until smooth.
- Toast the pine nuts in a dry frying pan.
- Stir the sauce through the pasta. Add a little of the pasta water to make the sauce lovely and creamy.
- Serve the pasta with burrata, crispy Serrano ham, toasted pine nuts, rocket and extra pepper.
