Spicy honey halloumi tacos

250 g halloumi
8 mini tortillas
2 avocados
60 g rocket
50 g pomegranate seeds
1 harissa heaped tsp
2 tbsp honey
1 tsp chilli flakes
¼ cup Greek yoghurt
10 g chopped mint
Method
- Prepare the avocados by cutting each half into quarters.
- Make the mint yoghurt by combining the yoghurt and chopped mint.
- Slice the halloumi thinly, making sure it is not so thin that it breaks.
- In a bowl, combine the honey, harissa, chilli flakes and a pinch of black pepper.
- Add the halloumi to the bowl and coat it with the sauce. Spoon more over it during cooking if any remains in the bowl.
- Cook the halloumi in a large frying pan over a high heat for 3-4 minutes on each side, or until charred but not burnt.
- Toast the tortillas and add 1/4 mashed avocado to each tortilla along with rocket.
- Divide the halloumi between the tacos and top with mint yoghurt and pomegranate seeds.
