2 tbsp chilli oil (with flakes)
1 tbsp mayonnaise (Kewpie if available)
½ tsp gochugaru (optional)
½ tbsp gochujang
1 tsp hoisin sauce
1 tsp soy sauce
1 tsp sesame oil
½ cup thinly sliced beef
dried shiitake slice a handful · to taste
2 cups water or stock
1 ramen noodle bundle (without sachet)
¼ silken tofu, broken into pieces block
freeze-dried tofu piece (optional) a few · to taste
dried seaweed piece small handful · to taste
2 chopped spring onions
1 egg
salt to taste
Method
- Heat chilli oil in a pan over a medium-high heat and crack the egg into it. Let it fry until the edges start to crisp.
- Quickly add the mayonnaise, gochujang, hoisin, soy sauce, sesame oil and gochugaru (if using) directly to the pan.
- Add the shiitakes, seaweed, silken tofu pieces and about 2 cups of stock. Stir gently to combine and bring to the boil.
- Add the ramen noodles and cook until they are almost tender.
- Add the thinly sliced beef and cook until no longer pink, about a minute.
- Taste and adjust with salt or soy sauce, then garnish with spring onions and enjoy!
