Marinade
4 boneless, skinless chicken thighs
2 tbsp soy sauce
2 tbsp chilli oil
2 tbsp sriracha
2 tbsp honey
1½ tsp garlic powder
1 tsp smoked paprika
1 tbsp olive oil
Broth
905 g ramen broths (Ocean's Halo)
3 cups chicken stock
1 clove grated garlic cloves
2 tbsp soy sauce
2 tbsp fish sauce
1 bok choy
2 cups sliced baby bella mushrooms
Noodles
Japanese-style ramen noodle to taste
Spicy cream sauce
2 tbsp Japanese mayonnaise
1 egg
1 tbsp soy sauce
1 tbsp chilli oil
½ cup reserved broths for tempering the eggs
Garnish
spring onion to taste
chilli oil to taste
4 boiled eggs
Method
- Marinate the chicken thighs with soy sauce, chilli oil, Sriracha, honey, garlic powder, smoked paprika and olive oil.
- Combine the ramen broth, chicken stock, grated garlic, soy sauce and fish sauce in a pot. Bring to the boil.
- Add bok choy and sliced mushrooms to the broth and cook until tender.
- Cook the Japanese-style ramen noodles according to the instructions on the packet.
- For the spicy cream sauce, mix Japanese mayonnaise, egg, soy sauce, chilli oil and reserved broth to temper the egg.
- Assemble the ramen by placing noodles in a bowl, adding broth with vegetables and topping with marinated chicken and spicy cream sauce.
- Garnish with chopped spring onions and extra chilli oil. Serve with boiled eggs.
