400 g pasta (preferably penne or fusilli)
2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, finely chopped
400 g tinned chopped tomatoes
200 ml double cream
10 g fresh basil
50 g grated Parmesan
salt to taste
black pepper to taste
Method
- Bring a large pan of lightly salted water to the boil. Add the pasta and cook according to the instructions on the packet, until al dente. Drain and set aside.
- Meanwhile, heat the olive oil in a large frying pan over a medium-high heat. Add the onion and fry until translucent, about 3 minutes.
- Add the chopped garlic and fry for another minute.
- Add the chopped tomatoes and bring to the boil. Simmer for 5 minutes so the sauce thickens slightly.
- Stir the double cream into the sauce and season with salt and black pepper. Simmer for another 5 minutes.
- Add the cooked pasta to the sauce and mix well.
- Garnish with fresh basil and grated Parmesan cheese. Serve immediately.
