Endive stamppot with gyros meat and peaches

1 kg potatoes
350 g endives
500 g gyro meat
1 peach tin
1 onion
milk to taste
butter to taste
mustard to taste
salt to taste
Method
- Peel the potatoes and boil them in plenty of salted water.
- Meanwhile, finely chop the onion and fry it in a little butter or oil.
- Add the gyros meat and fry until golden brown and cooked through.
- Cut the peaches into small cubes and set aside.
- Once the potatoes are cooked, drain them and mash with a knob of butter, a splash of milk and a little mustard until smooth and creamy.
- Stir in the chopped endive so that it wilts slightly.
- Then add the fried gyros meat and onion and mix everything together well.
- Serve the stamppot on plates and scatter the peach pieces over the top for a fresh, sweet contrast.
