Tiramisu with vanilla & mascarpone
Constantijn 25 Jul 2026Tiramisu is one of the best-known - and, in our opinion, most delicious - desserts from Italy. You can easily put your own spin on it by using limoncello instead of marsala, for example, but this version stays classic.

4 large eggs, separated
4 tbsp fine caster sugar
400 g mascarpone
1 vanilla pod pulp vanilla pod
1¼ cups strong espresso
3 tbsp Marsala
200 g ladyfinger biscuits
1 tbsp cocoa powder
Method
- Whisk the egg whites in a large, spotlessly clean bowl until stiff. Set the egg white foam aside for now.
- In another bowl, whisk the egg yolks and sugar until light and creamy, then add 100 grams of the mascarpone and the vanilla seeds. Mix until smooth, then gradually add the rest of the mascarpone while whisking, until you have an even mixture. Carefully fold in the egg white foam.
- Pour the coffee and marsala into a shallow bowl. Dip 8–10 of the sponge fingers into the liquid one at a time. Arrange them next to one another on the bottom of a dish (capacity 2 l).
- Spread one third of the mascarpone mixture over them. Then make two more identical layers of soaked sponge fingers and mascarpone cream.
- Dust the top with cocoa and leave the tiramisu to set in the fridge for 1 hour before serving.
