Vanilla skyr cheesecake
This vanilla skyr cheesecake is easy to make in the oven with just three ingredients. The cheesecake is light, high in protein and has a soft, creamy texture.

450 g vanilla skyr
3 eggs size M
55 g whipped pudding mix vanilla
1 tsp vanilla optional
Method
- Put the skyr, eggs and whipped pudding powder in a bowl.
- If you like, add an extra vanilla flavour shot.
- Mix everything with a mixer until you have a lovely smooth, even batter. Don’t mix for too long; as soon as everything is well combined, the batter is ready.
- Line a 22 cm cake tin with baking paper and pour in the batter.
- Smooth the top and place the tin in the oven at 150 degrees.
- Bake the cheesecake for 45-60 minutes. The cheesecake can still feel slightly soft when you take it out of the oven.
- Leave the cheesecake to cool, first for 10 minutes in the tin and then on a wire rack.
- Then place the cheesecake in the fridge for 1-1,5 hours so that it becomes firmer.
- After taking the cheesecake out of the fridge, pat it dry with a piece of kitchen paper and sprinkle with icing sugar if you like.
