4 sweet potatoes
500 g lean minced beef
½ cup natural yoghurt
¼ cup fresh parsley
2 tbsp taco seasoning
1 tbsp olive oil
salt to taste
pepper to taste
Method
- Preheat the oven to 200°C.
- Prick the sweet potatoes with a fork and bake them in the oven for 25 minutes or until soft.
- Heat olive oil in a frying pan over a medium heat. Add the minced beef and cook until browned.
- Add taco seasoning to the mince and stir well. Cook for a further 5 minutes.
- Once the sweet potatoes are ready, cut them open and fill them with the cooked mince mixture.
- Drizzle with natural yoghurt and sprinkle with fresh parsley before serving.
